Recipe: Chocolate Chip Cookies

Number 97 on my 101 Things in 1001 list is make 5 different types of cookies and well, it’s been  while since I made any sort of cookies so I thought start with a basic favourite of mine. Which is chocolate chip cookies!

Chocolate chip cookie ingredients
Ingredients:
150g salted butter, softened
1 large egg
80g light brown muscovado sugar
80g granulated sugar
2tsp vanilla extract
225g plain flour
1/2tsp bicarbonate of soda
200g plain chocolate chips

1. Heat oven to 190c/170c fan/gas 5. Line two baking trays with baking paper.

2. Put the butter and sugars into a bowl and beat until creamy. Add in the vanilla extract and egg and beat together. Sieve the flour and bicarbonate of soda over the mixture and mix in with a wooden spoon. Add the chocolate chips and stir well.

3. Using a teaspoon, place small amounts of the mixture well apart on the baking trays. Bake in the oven for 8-10 minutes, until light brown on the edges and still slightly soft in the centre.

4. Leave on the try for a couple of minutes to firm up and then transfer to a cooling rack.

I struggled on a size, as you can tell but otherwise these were really nice. I took them all to my Mum’s and they were quickly demolished, so I think they were a success!
